Our Story

For years, Park City resident Easton Schultz was dissatisfied with grocery store beef options. Pre-packaged and over-the-counter beef in Utah grocery stores was not local, even though Utah is home to some 750,000 head of cattle. While most of these cattle are bred and born here, very few are raised or harvested in Utah. Instead, cow-calf operations sell weaned calves out of state to the big-four meat packers to be cheaply finished in tight living conditions, factory processed, and sold to fast-food establishments or bulk grocery stores - a broken system that undervalues both the animals and the beef.


Easton founded ZF to change that story. He wanted to keep Utah cattle in Utah, from birth to harvest, in the humane conditions that improve cattle quality of life and lead to better beef. ZF sources beef exclusively from ranches that raise animals the right way, where they have fodder to graze on and room to roam. These cattle are finished, harvested, and dry-aged in Nephi, UT at a state-of-the-art small processing facility. When you buy from ZF, you're not just eating local - you're also standing up to the mega meat packers that raise cattle inhumanely, age beef cheaply, and try to put American ranchers out of business.

Proud Member - Utah's Own™

As a member of the Utah's Own program, we certify that all of our beef comes from cattle that are born, bred, humanely raised, and humanely harvested in Utah. These cattle are raised on stunning ranches located in the areas of Spanish Fork Canyon, Nephi, and St George. Cattle are finished and harvested in Nephi, less than 80 miles from our company headquarters in Park City.

Always Dry-Aged

We believe in the superior taste and tenderness of dry-aged beef. Over 90% of beef in grocery stores is wet-aged in plastic wrap because it's faster, cheaper, and doesn't result in weight loss from evaporation. Although it is a slower and more expensive process - nothing compares to the flavor of dry-aged beef, which is why we never cut corners with the aging process. You'll find dry-aged beef in the finest steakhouses in the world, and now - in your own kitchen.

With your help, another generation of Utahns will be able to continue the age-old Western tradition of raising cattle in our state's pristine mountains and fertile valleys.

Local Beef Without the Hassle

We're committed to reducing food waste, which is why we make it easy for our customers to only buy what they need. A half or full cow isn't the right purchase for everyone, but you can still eat local beef at a fair price. Our portion-cut steaks, roasts, and ground beef are the perfect option for the majority of consumers. Local delivery and nationwide shipping make getting our products a breeze.

Humanely Raised Beef

Happy Cattle

The majority of Utah's 750,000 head of cattle are bred and born here, but they are not raised or harvested here. Instead, they're weaned here by cow-calf operations and shipped cross-country via tightly packed railcar to feed lots in the Midwest. Not our beef. Our beef comes from cattle that experience far less travel and therefore less stress. They have fodder to graze on and room to roam - the way it should be.

Ethical Harvesting

The high levels of stress that cattle endure in large packer facilities causes a depletion of glycogen in their bloodstream which results in firmer, drier, and more acidic meat. Our beef comes from cattle that are harvested at the newest processing facility in Utah. This state of the art facility is thoughtfully designed to cultivate a low stress environment for cattle prior to harvesting.
